Vegetable Soup

When it’s cold outside and all you want to do is cuddle, it’s nice to have a warm bowl of vegetable soup. We love soup in our house. We always substitute regular noodles for a gluten free option. I also don’t love chopping EVERYTHING that goes into soup so I often opt for frozen vegetables or canned beans.

On your stove top add to a big pot:

  • Gluten Free Chicken broth (Pacific – 15oz) x2
  • 4 cups of water
  • Salt and Pepper (I like a lot of salt)
  • 1 tsp. Garlic powder
  • 1 bay leaf
  • ½ tsp Curry Powder
  • 1 can kidney beans
  • Chop 1 zucchini
  • Chop a handful of carrots
  • Chop Celery
  • Add frozen green beans
  • Bring to boil and then let simmer while your pasta cooks

In a separate pot bring water to a boil

  • Cook GF Pasta per the box
  • (I always have my Pasta separate so I can eat the soup for a few days without soggy pasta)

Combined in a bowl and add spinach on top right before serving
